This Vietnamese crispy noodle stir fry is a classic comfort meal that plays with contrasting textures and flavors using fried noodles, a light gravy, and stir-fried veggies and protein. Once you learn this recipe you can recreate a version at home that’s customized to your liking and ultimately much healthier than what you’d be getting from take-out!

INGREDIENTS NEEDED FOR THIS DISH

Beef: Typically, I recommend using flank steak in stir-fried beef recipes, however any cut of beef will do. Whichever cut of meat you choose, make sure to slice the beef thinly against the grain.
Noodles: This dish traditionally uses egg noodles. I use dried egg noodles. You can also use refrigerated or frozen egg noodles sold at Asian grocery stores. You can also use noodles labeled low mein or chow mein. There are other noodle types available at Asian markets such as Korean ramen noodles or Japanese udon noodles but those will have a different texture than the noodles shown here.
Vegetables: I love to incorporate bok choy, napa cabbage, green beans and carrots in this dish. Feel free to use your favorite vegetables in this dish! Some other commonly used vegetables include bell pepper, snow peas, beansprouts, scallions, and water chestnuts. Just make sure to chop them all approximately the same size so that they cook evenly.
Broth or Stock: To flavor the noodles, you will need vegetable or chicken broth or stock. You can also use water, but the flavor won’t be as rich.
Seasonings: you will need salt, pepper, sugar, oyster sauce and soy sauce to flavor this dish.
Eggs: the recipe calls for large eggs at room temperature.
Sugar: use granulated sugar to make the recipe.
TIPS FOR MAKING VIETNAMESE CRISPY NOODLE STIR FRY
Marinate your protein: the best way to ensure tender and flavorful meat is to marinate your protein in a mixture of egg and cornstarch before stir-frying. The cornstarch and egg helps seal in the juices of whatever protein you’re cooking to ensure it stays crisp and juicy even after a high heat stir-fry.
Prepare all ingredients and cook them separately: it’s important to cook the protein and vegetables separately since they require different cooking times. This prevents the protein from being overcooked since the vegetables most likely take longer to cook.

HOW TO MAKE VIETNAMESE CRISPY NOODLE STIR FRY
Slice the beef thinly against the grain and toss with salt, pepper, cornstarch, and an egg. Set aside to marinate for 15-30 minutes depending on how much time you have.
Add all ingredients for the stir-fry sauce to a bowl and stir well to combine. Set aside.
Fry the egg noodles in hot oil until they crisp up and look like a bird’s nest. Set it aside on your serving plate.
Place a pan over medium hight heat. Once it is hot, add oil. Add the beef slices in a single layer and let them cook undisturbed for about 20-30 seconds. Then add half of the minced garlic and stir-fry the beef for a few more seconds until it is 80% cooked and still a bit pink. Transfer to a plate and set aside.
If needed, add additional oil to the same pan and reduce heat to medium. Add carrots (if using) and cook for 30 seconds. Then add remaining leafier vegetables (onions, napa cabbage, bok choy) and stir-fry for 1-2 minutes, along with any garlic and onion. Vegetables will have wilted but should still be crisp.
Add the beef along with any juices back to the pan. Stir and toss everything together quickly until flavors are combined, beef is cooked through and vegetables are crisp-tender. Adjust seasonings to your taste.
Top the crispy noodles with the vegetable and beef stir-fry mixture. Ladle some vegetable or chicken gravy over the top. Sprinkle additional salt and pepper and enjoy immediately.

- 8 oz beef or other protein of your choice thinly sliced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp cornstarch
- 1 large egg
Stir-Fry Sauce
- 1 tbs oyster sauce
- 1/2 tbs soy sauce
- 2-3 tbs water or stock
- 1/4 tsp sugar
Gravy
- 2 cups vegetable or chicken stock
- 2 tbs cornstarch
- 3 tbs water
Noodles
- 4 oz dried egg noodles
- 2 tsp garlic minced
- 1/2 cup sliced carrots
- 6 oz broccoli florets
- 4 oz snap peas
- 4 oz shrimp
